In Season: Lemons

I’m taking a real shortcut here and posting the link to the recipe that I used for these here. Using buttermilk makes these pancakes light as a feather, and the lemon is really delicious because it runs throughout the whole stack. Poppy seeds give them both a crunch and a nice speckled effect. Sprinkled with sugar and then a squeeze of lemon is my favourite topping, but they are also delicious with maple syrup or honey.
